When you think about Quesadillas, you probably aren't thinking of it being packed full tomatoes or topped with lettuce like these BLT Quesadillas.
But when you think about it, it's no different when you get takeout from your favorite Mexican restaurant and the top their dishes with salsa (tomatoes) and shredded lettuce among other things.
While bacon is not commonly found in Mexican dishes, it's one of the main ingredients in a traditional BLT (Bacon Lettuce Tomato). And personally I find that bacon makes everything taste better. So why not a BLT Quesadilla?
🧀 What is a Quesadilla
A quesadilla is a Mexican dish consisting of a tortilla that is filled primarily with cheese, and sometimes meats, beans, and spices, and then cooked on a griddle. Traditionally, a corn tortilla is used, but it can also be made with a flour tortilla, particularly in northern Mexico and the United States. You can read more about it here Quesadilla - Wikipedia.
🥓 How to Make Bacon
If you struggle to make bacon perfectly, I've put together a short tutorial on How to Make Perfect Bacon - 3 Ways. Check it out! My preferred method is baking it in the oven.
And don't throw away that bacon grease! Bacon is expensive and the grease is great for making Scrambled Eggs, Grilled Cheese, Popcorn and even hash browns. It can keep up to 3 months if properly stored in the refrigerator.
