Awesome BLT Quesadillas

These BLT Quesadillas are not only awesome but super easy to make. A nice adaptation of the classic BLT Sandwich.
When you think about Quesadillas, you probably aren’t thinking of them being packed full of tomatoes or topped with lettuce like these BLT Quesadillas.
But when you think about it, it’s no different when you get takeout from your favorite Mexican restaurant and top their dishes with salsa (tomatoes) and shredded lettuce among other things.
While bacon is not commonly found in Mexican dishes, it’s one of the main ingredients in a traditional BLT (Bacon Lettuce Tomato). And personally I find that bacon makes everything taste better. So why not a BLT Quesadilla?
What is a Quesadilla
A quesadilla is a Mexican dish consisting of a tortilla filled primarily with cheese, and sometimes meats, beans, and spices, then cooked on a griddle.
Traditionally, a corn tortilla is used, but it can also be made with a flour tortilla, particularly in northern Mexico and the United States. You can read more about it here Quesadilla – Wikipedia.

And don’t throw away that bacon grease! Bacon is expensive and the grease is great for making Scrambled Eggs, Grilled Cheese, Popcorn and even hash browns. It can keep up to 3 months if properly stored in the refrigerator.

Gather your Ingredients
You will need the following ingredients to make this BLT Quesadillas recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.
- Bacon
- Monterey Jack Cheese
- Sharp Cheddar Cheese
- Flour Tortillas – use a good brand tortilla like Mission or Guerrero
- Tomatoes
- Lettuce – you can either use Romaine or Iceberg lettuce
- Ranch Dressing – Hidden Valley is my preferred brand
How to Make BLT Quesadillas
- In a mixing bowl, toss the Monterey Jack Cheese and the cheddar cheese together.
- Place 4 flour tortillas on the counter and spread about 1/3 cup of the cheese over each tortilla. Sprinkle about 1/4 cup of the diced tomatoes and 1/4 cup of the chopped bacon over the cheese. Sprinkle another 1/3 cup of cheese over top.
- Slide one of the quesadillas on a skillet over medium heat. Place one of the remaining tortillas on top. Press down with a wide spatula to remove any air pockets. Cook 1 to 2 minutes, until the bottom tortilla is crisp and browned.
- Turn over and cook 1 to 2 minutes more, or until lightly browned. Repeat this process for the remaining quesadillas.
- Toss the lettuce with the ranch dressing and spread over top of the quesadillas. Cut into wedges and serve immediately.

Ingredients
- 8 slices Bacon, cooked & diced
- 6 oz Monterey Jack Cheese, grated
- 2 oz Sharp Cheddar Cheese, grated
- 8 Flour Tortillas
- 4 Tomatoes, diced (seeds and liquid removed)
- 4 cups Lettuce, shredded
- ¼ cup Ranch Dressing
Optional
- Sour Cream
- Salsa
- Quesadilla Dipping Sauce
Instructions
- In a mixing bowl, toss the monterey jack cheese and the cheddar cheese together.

This quesadilla recipe is great. I love Monterey Jack cheese so this was a good recipe to use it in. It was delicious. A sure keeper for me and my family.
