Delicious Buffalo Chicken Pinwheels

Looking for a tasty appetizer? These Buffalo Chicken Pinwheels are a crowd-pleaser. Serve with Blue Cheese or Ranch Dressing.

One of my absolute favorite appetizers to make are pinwheels. I wanted something slightly different than my Cheddar Bacon Pinwheels or my Green Chili Pinwheels so whipped up these Buffalo Chicken Tortilla Pinwheels.

Tips

  • Instead of cooking your own chicken, save yourself some time by using some rotisserie chicken.
  • It will be much easier to roll the tortillas if they are at room temperature.

Just like their big brother Buffalo Chicken Wings, you can optionally serve these delicious pinwheels with a side of Blue Cheese Dressing or Ranch Dressing.

When it comes time to cut the rolled-up tortillas, I recommend using a good serrated knife. Also it is much easier to cut if the rolls are still cold from their time in the fridge.

When the time comes to warm up your tortillas, you have a few options. You can wrap the tortillas in foil and bake them for 10 minutes at 350°F. You can also put them in a non-stick pan to heat both sides of the tortilla (this is how I usually do it), heat them over an open flame, or if you must, wrap them in a damp paper towel and microwave them for about 30 seconds.

You will need the following ingredients to make this Buffalo Chicken Pinwheels recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.

  • Flour Tortillas – Softened so they don’t crack when you roll them
  • Chicken Breasts – Cooked and shredded boneless and skinless
  • Green Onions – You can also use scallions
  • Colby Jack Cheese – Mexican blend cheese can also work
  • Blue Cheese – Have to love the stinky cheese with Buffalo Wing Sauce
  • Frank’s RedHot Buffalo Wings Sauce – Or your favorite brand
  • Cream Cheese – Make sure it’s softened to make it easier to mix

How to Make Buffalo Chicken Pinwheels

  1. In a mixing bowl, beat cream cheese, Colby jack cheese, blue cheese, green onions, and the hot wing sauce until well blended. Add the shredded chicken and stir well until combined.
  2. Spread about 3/4 cup of the chicken mixture on each tortilla. Roll each tortilla tightly then wrap them in plastic wrap. Store the rolls in the refrigerator for at least 2 hours.

  3. When ready to serve, slice into bite-size pieces. Optionally serve with blue cheese dressing or ranch dressing.
