Chocolate Mayonnaise Cake

Two words you thought you would never hear together in the same sentence: Chocolate and Mayonnaise. Sure doesn’t sound appealing but this is one of the moistest chocolate cakes you will ever eat!
I originally published this Chocolate Mayonnaise Cake recipe in my cookbook available on Amazon. My mom has been making this chocolate cake recipe for decades and shared it with me when I was writing my book.
The first thing you will notice is that the mayonnaise replaces the eggs in this recipe. Mayonnaise is typically made of eggs and oil so it is fine to use for the cake batter.
What I really like about this particular chocolate cake recipe is just how moist it is. This is one of the moistest cakes you will ever have. If you love moist chocolate cake, you must try this recipe.
What does it taste like
It tastes just like Chocolate Cake. No seriously. You can’t even tell that mayonnaise was used to make this cake. I have served this cake to guests many times and usually don’t tell them till they are done eating that it was made with mayonnaise.
As far as frosting goes, you can either use store-bought frosting or try one of my awesome cake frosting recipes. I would recommend either my Cream Cheese Frosting recipe or my personal favorite Mocha Buttercream Frosting.

Gather your Ingredients
You will need the following ingredients to make this Chocolate Mayonnaise Cake recipe (see recipe card for quantities): All Purpose Flour, White Sugar, Cocoa Powder, Baking Powder, Baking Soda, Salt, Mayonnaise, Water and Vanilla Extract.
How do you Make Chocolate Mayonnaise Cake
- Preheat Oven to 375°F.
- In a large mixing bowl, sift all the dry ingredients together.
- Add mayonnaise, water and vanilla extract. Beat well.
- Pour cake batter into a lightly greased cake pan.
- Bake for 25 to 30 minutes or until a toothpick comes out clean.
- Let the cake cool in the pan until the sides of the cake pull away from the pan. Move to a wire rack to cool before frosting.

Baking pan size, please!
I believe I used my 8-inch round cake pan but you can use whatever shape you want.
In the 1950s my mother made this cake for our family. She always had the ingredients on hand too. For 36 years she’d ask me what kind of birthday cake I wanted and every year it was the same, Chocolate Mayonnaise Cake, of course. The frosting varied sometimes, but invariably it was chocolate buttercream. When I was nine yo I asked for blue buttercream frosting and that’s what I got!
I made this cake for our ice cream social and everyone’s eyes bugged out after their first taste. That’s when I told everyone it was a chocolate mayonnaise cake. 😝😋😋😋😋😋
