    Slow Cooker Cheese Tortellini Soup with Chicken

    This Cheese Tortellini Soup with Chicken recipe is super simple to make in your slow cooker. Healthy Soup packed full of flavor!

    This Cheese Tortellini Soup with Chicken is super simple to make in your slow cooker. It's as easy as placing all the ingredients in your slow cooker and letting it do its thing for about 6 hours.

    In addition to the cheese tortellini that "act" as the noodles in this soup, it also has some chicken in it to give this delicious soup some protein. I like to use a couple of large chicken breasts for this soup recipe but you can adjust based on personal preference.

    🐓 How to Handle Raw Chicken

    Leave the chicken in the fridge until ready to use.
    Be careful of dripping juices. Clean up immediately.
    Do not wash raw chicken (which prevents cross-contamination).
    Wash all utensils and cutting boards (if applicable).
    If marinating the chicken, make sure you toss the juices before you cook. Don't ever use the juice from the marinade.
    Wash your hands after handling raw chicken.

    The same goes for the chicken broth. You can use a little less low sodium chicken broth but you will need to add a bit more water. You should have about 7 cups of liquid for this delicious cheese tortellini soup.

    💭 Slow Cooker Tip

    Try to resist as much as possible the temptation to open the lid while it's cooking as the slow cooker loses heat. By just opening the lid to stir the contents can make the internal temperature drop by 10°F to 15°F.

    📋 What Ingredients do I need

    You will need the following ingredients to make this Cheese Tortellini Soup with Chicken recipe in your Slow Cooker (see recipe card for quantities): Chicken Breasts, Carrots, Celery Sticks, Yellow Onion, Garlic Cloves, Low Sodium Chicken Broth, Water, Bay Leaf, Italian Seasoning, Frozen Cheese Tortellini and Salt & Pepper.

    🥣 How to make Cheese Tortellini Soup with Chicken

    Add all the ingredients to the slow cooker except for the frozen cheese tortellini. Cook on low for 6 hours.
    Remove the cooked chicken from the slow cooker and shred or cube based on your preference. Place the chicken back in the slow cooker.
    Add the frozen cheese tortellini to the slow cooker and cook for 15 minutes or until the tortellini's are tender.
    Discard the bay leaves. Salt and pepper to taste.
    Optionally garnish with chopped parsley.

    • Slow Cooker

    Ingredients
     

    • 1 ½ lbs Chicken Breasts
    • 3 medium Carrots, peeled and diced
    • 3 Celery Stick, diced
    • 1 Cup Yellow Onion, finely diced
    • 3 Garlic Cloves, minced
    • 6 Cups Low Sodium Chicken Broth
    • 1 Cup Water
    • 2 Bay Leaves
    • 1 teaspoon Italian Seasoning, or more to taste
    • 2 Cups Frozen Cheese Tortellini
    • Salt and Pepper, to taste

    Instructions
     

    • Add all ingredients to a slow cooker except for the tortellini.
    • Cook on low for 6 hours.
    • Remove the cooked chicken from the slow cooker and shred or cube and add back to the slow cooker.
    • Add in the tortellini and cook for 15 minutes or until they are cooked all the way through.
    • Season with salt and pepper to taste. Discard bay leaves and serve immediately with chopped parsley if desired

    Notes

    → Contrary to popular belief, a whole head of celery is called a stalk and a single “stick” from the stalk is called a rib. Since most call a rib of celery "stalk", I use the term Celery Stick to try and avoid any confusion.
