
I was going through my pantry and found an unopened jar of orange marmalade and came up with a plan to make these muffins.
I previously used orange marmalade to make my Slow Cooker Orange Chicken but I don’t have too many other recipes in my arsenal calling for this ingredient.

Tips
- Don’t you hate it when raisins get stuck together in a big clump? To unstick the raisins, wet your hands with a little water then work the raisins apart.
Recipe Variation
Instead of using raisins for this recipe, you can use some finely chopped dates. Or use neither one! Make them the way you want!

Gather your Ingredients
You will need the following ingredients to make this Spiced Orange Marmalade Muffins recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.
- Egg – you will only need the egg white for this muffin recipe
- Orange Marmalade – I like Smucker’s brand for this recipe (no affiliation)
- Canola Oil – You can also use Vegetable Oil
- Honey – Use your favorite brand
- Orange Zest – You can omit this if the marmalade you are using has zest in it
- Lemon Extract – You can use pure or imitation lemon extract for these muffins
- Milk – I use 2% milk
- Raisins – Optional as some people don’t like raisins
- All Purpose Flour – I mostly use King Arthur but use what you got (no affiliation)
- Baking Powder – needed to help the muffins rise
- Ground Cinnamon – adds a warm, sweet, and slightly woody flavor
- Ground Cloves – adds a little spiciness to the muffins
- Baking Soda – helps create a nice texture for the muffins
- Salt – a common ingredient in many recipes
How to Make Spiced Orange Marmalade Muffins
- Preheat the oven to 425°F. Lightly grease a muffin pan and set aside.
- In a medium bowl, whisk together the egg white, orange marmalade, oil, honey, orange zest and lemon extract.
- Add the milk and raisins (if using) and mix well.
- In a large bowl, stir together the all purpose flour, baking powder, cinnamon, cloves, baking soda and salt.
- Add the marmalade mixture to the flour mixture. Stir until moistened. The batter should be lumpy at this point (Do not overmix).
- Spoon the muffin batter evenly into the prepared muffin pan.
- Bake for 13 to 16 minutes, or until a toothpick comes out clean.
- Let the muffins cool in the pan for 5-10 minutes then move to a wire rack to cool completely.

I like these. The orange zest really make these muffins pop
