What is a Quesadilla
A quesadilla is a Mexican dish consisting of a tortilla filled primarily with cheese, and sometimes meats, beans, and spices, then cooked on a griddle.
Traditionally, a corn tortilla is used, but it can also be made with a flour tortilla, particularly in northern Mexico and the United States. You can read more about it here Quesadilla – Wikipedia.
To make this quesadilla recipe as easy as possible I like to use rotisserie chicken but if that is not an option for you, you will need to cook the chicken before starting this recipe.

Tips
- If you don’t feel like cooking bacon just for this recipe you can use precooked bacon. Simply warm it up in the microwave and chop it up. You probably won’t even taste the difference.
Ingredient Substitution
If you don’t have any Colby Jack on hand you can substitute for some Mexican Blend Cheese or Monterey Jack Cheese or you can use whatever kind you prefer or have on hand as long as it melts well

Gather your Ingredients
You will need the following ingredients to make this Chicken Bacon Ranch Quesadillas recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.
- Flour Tortillas – use a good brand tortilla like Mission or Guerrero
- Ranch Dressing – Hidden Valley is my preferred brand
- Rotisserie Chicken – you can also use a couple of cooked chicken breasts chopped up
- Bacon
- Colby Jack Cheese – you can also use Mexican Blend Cheese
How to Make Chicken Bacon Ranch Quesadillas
- Place 4 flour tortillas on the counter. Spread 2 tablespoons ranch dressing over 2 tortillas.
- Top each with 1/4 of the cheese, half of the chicken, half of the bacon and a 1/4 of the cheese. Top each with another tortilla.
- On a lightly greased skillet, add one quesadilla and cook for 1 to 2 minutes, checking frequently, until the bottom tortilla is crisp and browned.
- Turn over and cook for 1 to 2 minutes more, or until lightly browned. Repeat for the remaining quesadilla.
- Cut into wedges and serve immediately with a side of sour cream for dipping (optional).
