Delicious Banana Cake with Walnuts

This is one Delicious Banana Cake with Walnuts. It doesn’t get much better than this. Tired of making Banana Bread with your ripe bananas? Try making a cake instead!

I’ve made a couple of different banana cakes before, my Double Chocolate Banana Cake and my Perfect Banana Cake recipe. Both equally delicious but this particular recipe is my favorite.

It’s amazing how many people don’t like nuts in their banana bread or cake. That’s ok. They are completely optional and you can leave them out if you don’t care for nuts or have an allergy.

The best bananas for banana bread are when they are overripe, not yellow but black. Or they’re at least streaked with black/brown. The darker the better.

If you can’t find overripe bananas, you can speed up the process by putting the bananas in a paper bag along with an apple and loosely folding down the top. The bananas should ripen in just a day or two using this method.

If you make banana bread frequently, you will notice that this banana cake recipe cooks quicker than banana bread.

Typically banana bread bakes for about 1 hour while this cake is ready in about 30 minutes. Make sure you do the toothpick test to ensure it’s not raw in the middle!

If you don’t have Buttermilk on hand, you can use this trick as a substitute: Add one tablespoon of lemon juice to a measuring cup. Add milk and fill to the 1 cup measurement line. Stir the mixture together and let sit for 5 minutes. Since this recipe calls for 2/3 cup you will need to adjust accordingly.

Another option is to use a cultured buttermilk blend. All you need to do is add water. I was very skeptical at first but in a pinch it works great!

You will need the following ingredients to make this delicious Banana Cake with Walnuts recipe (see recipe card for quantities): All Purpose Flour, Baking Powder, Baking Soda, Salt, Ground Nutmeg, Unsalted Butter, White Sugar, Eggs, Vanilla Extract, Ripe Bananas, Buttermilk and Walnuts.

  1. Preheat oven to 350°F. Lightly grease two 9-inch round cake pans. Line the bottoms with parchment paper. Set aside.
  2. In a mixing bowl, sift together the all purpose flour, baking powder, baking soda, salt and nutmeg. Set aside.
  3. In a large mixing bowl, cream the butter then gradually add in the sugar, beating until fluffy.
  4. Add in the eggs, one at a time, beating well after each addition. Add the vanilla extract. Mix well.
  5. Pour in the dry ingredients alternating with the bananas and buttermilk, mixing until the batter is smooth and blended. Fold in the chopped nuts.
  6. Spoon the batter into the prepared pans. Bake for 25 to 30 minutes, or until a toothpick comes out clean.
  7. Cool on wire racks for about 10 minutes. Remove the cakes from the pans and continue to cool.

  • 2 Cups All Purpose Flour
  • 1 Tsp Baking Powder
  • 1 Tsp Baking Soda

  • ½ Cup Unsalted Butter, room temperature
  • 1 ½ Cups White Sugar
  • 2 Eggs

  • ½ Cup Walnuts, toasted & chopped

    I made this cake today and it is the most moist banana cake I’ve ever tasted. It is truly delicious. My husband and neighbors gave it rave reviews.

    I didn’t measure my bananas. I used two ripe bananas. Also I had no buttermilk so I used 2% milk with some lemon juice. I had never toasted walnuts before. So I chopped them first and then put them in the over on foil for a bit. I used my Wilton butter cream icing recipe.

    Thank you for sharing this wonderful recipe. I will definitely be making it over and over again.
